Celery Soup
Ingredients :
1/4 cup olive oil
1 onion, chopped
3oz bacon, finely chopped
1 head celery, trimmed/diced
2 tbs. tomato paste
10 cups hot beef stock
3/4 cup short-grained Italian Arborio rice
salt and freshly ground pepper to taste
grated parmigiano cheese
Instructions :
1) In a large, heavy-bottomed saucepan with a lid, heat oil over medium heat. Add
onion and bacon; cook for 5 minutes or u ntil onion is softened. Stir in celery
and tomato paste; cook 10 minutes longer, stirring occasionally.
2) Stir in stock and bring to a boil. Reduce heat to medium-low, cover and simmer
for 20 minutes. Stir in rice; cook, covered, 15 minutes longer or until rice is
just cooked through. Season to taste with salt and pepper. Serve sprinkled with
Parmigiano cheese.
